Stuffed Eye of Round Roast


  • 4 lb eye of round beef
  • 8 oz bacon
  • 1 green pepper
  • 1 white onion
  • 8 basil leaves
  • 1/2 cup ketchup
  • 3 tsp garlic paste
  • 2 tbsp sugar
  • Salt to taste
  • 2 tbsp butter
  • Pepper to taste


  • Poke the meat everywhere
  • Make small superficial cuts where the fat of the meat is
  • With a very sharp knife, make a hole in the center of the meat
  • Fill with the bacon
  • Blend the tomato, pepper, onion, basil, tomato sauce, garlic, salt and pepper.
  • In a large bowl, add the meat and pour the previously prepared mixture
  • Marinate for 2 hours
  • In a cauldron, melt the butter
  • Add the sugar and stir
  • Seal the meat on each side
  • Add the mixture that was used to marinate the meat
  • Cook in medium for 2 hours, turning every 30 minutes
  • Cut into slices and serve with the sauce left in the cauldron
