Rice with Shrimp

Ingredients:

  • 1 lb white rice
  • 2 lb shrimp with shells
  • 1 cup diced onion
  • 1 cup of red pepper, diced
  • 1 cup of green pepper, diced
  • 4 celery sticks, diced
  • 4 sticks green onions, diced
  • 1 lb. of tomato, diced
  • 1 cup of coconut milk
  • 3 tbsp butter
  • 1 tsp curry
  • 2 tsp garlic paste
  • 1/2 cup olive oil
  • Salt and pepper to taste

Preparation:

    • Peel the shrimp.
    • Cook the shrimp shells in water.
    • Blend with a little of this water.
    • Strain over the cauldron that you will use to prepare the rice.
    • Add the coconut milk through the strainer.
    • Add salt.
    • Add the rice.
    • Cook for 20 minutes.
    • In a pan, add butter and melt.
    • Add garlic and shrimp.
    • Cook over medium heat.
    • Add olive oil and onions.
    • Stir.
    • Add green pepper, red pepper, tomato and stir.
    • Add garlic, pepper, curry, salt, shrimp, and chives.
    • Stir and add the rice.
    • Stir all the ingredients.
    • Enjoy with green plantains.
