White Yam and Cheese Soup


  • 4 lb of white yam cut into different size pieces
  • 10 cups of water
  • 1 white onion, diced
  • 5 cloves of garlic, diced
  • 3 lb. of white cheese cut into cubes


  • In a saucepan, add water, garlic, onion and yam

  • Cook over high heat until it boils
  • Lower the temperature to medium heat and cook for 15 minutes

  • Stir and add half of the cheese
  • Cook for 15 minutes until the soup is thick and remove from the stove
  • Add the rest of the cheese

  • Serve and add more cheese if you wish. Pair with with sofrito, white rice, and avocado. It can also be served with fried eggplant or hard boiled egg.
